Hummus Hall of Fame

I was going through my archives, trying to figure out just how many different hummus recipes I've posted. For those of you who may have missed them, I decided to share them all again with you in my "Hummus Hall of Fame."

I made the cilantro/jalapeno hummus yesterday. I didn't have two cans of garbanzos, so I substituted one can of great northern beans, which worked out fine. I also added some tahini to make it more hummus-y (for fear the non-garbanzos would detract from its authenticity). It turned out really well! I used almost a whole can of jalapenos and it wasn't quite hot enough for me - I'm sure the fresh ones definitely spice it up.

I'm really enjoying your blog a lot! Keep up the great kitchen-work!

I was wondering if in all your cracker recipies have you ever tried extruding them in a cookie maker thingy. I just got one yesterday and I thought I might try it out for crackers, but all the recipies in the book it came with are cookies full of butter and I was hoping to make a non fat cracker.

it's funny - just yesterday i was sitting on the subway wondering to myself what the actual defining components of hummus are. do you have to have chickpeas? if i made something of a similar consistancy with with white beans could i call that hummus too, or would it be stuck with the word 'dip'?
anyhow, i'm impressed with all your variations on the theme.
