Balsamic Brussel Sprouts

Brussel sprouts are probably the least loved vegetable, but I think that's just because most people hven't had them prepared properly. I hated brussel sprouts when I was younger, and it wasn't until a few years ago I had them roasted and fell in love with them.

This is a super easy side dish recipe, and I think it's the perfect recipe to try brussel sprouts. And if you like this preparation, try out my previously posted "Not-your-Mama's Brussel Sprouts, which are roasted with garlic.

Balsamic Glazed Brussel Sprouts

Balsamic Brussel Sprouts
16 oz brussel sprouts
1 small red onion, thinly sliced
6 cloves garlic
4 tbsp olive oil
salt/pepper to taste
1 shallot, chopped
4 tbsp balsamic vinegar
1 tbsp chopped fresh rosemary

Preheat oven to 425. Combine brussel sprouts, onion, garlic, and 3 tbsp olive oil. Season with salt and pepper and spread out on a greased cookie sheet. Roaste 25-30 minutes until tender. Meanwhile, saute shallot in remaining olive oil over medium-high heat, until tender. Add balsamic vinegar and cook another 3 minutes. Stir in rosemary and pour over brussel sprouts.

Sounds delicious. And so simple.
Yeah, it wasn't till recently that I discovered the "proper" way to prepare brussel sprouts and now I can't wait to eat them. My version includes adding pancetta bacon and orange zest and juice to the sprouts.

I love Brussel sprouts, and this one's a winner! I like to take any leftover sprouts, cut them in half and add them to salads. This would work perfectly!

i am definitely going to try this out on my brussel-sprout-hating boyfriend. AND the other brussel sprout recipe as well--we have been making your roasted cauliflower recipe at least once a week since i found it, and i can't see how this won't be just as good! by the way, that cauliflower is great with a little tiny bit of parmesan sprinkled on it, too! :)

Mix of balsamix vinegar and brussels sprout must be really very interesting. i d be curious to try it on a very thin pie with some parmegiano.

Did you use fresh or frozen sprouts? If you used fresh, I wonder how it could be adapted for frozen ones...

Thanks for the recipe......I made these for a V-Day dinner last night with Chicken Piccata and roasted potatoes. Might sound like a strange combination of tastes but we were both happy! Some might say I burned the sprouts a touch as they were very dark from the heat, but the flavour was great and the onions were crunchy and caramelized in places. Good stuff.

stumbled across this recipe randomly, i think from tastespotting. made it last night along with some beet mashed potatoes and spelt with garlic/parsley/dried cherries/scallions/shallots. for my very first time ever making brussel sprouts, it was a lovely accompaniment to my other dishes. thanks! i'll definitely make this again.
