Breakfast Couscous

As soon as I saw this recipe in the current edition of Cooking Light, I knew I had a winner on my hands. It's easy, it's healthy, and it only takes about 15 minutes to make, most of that being non-active cooking time. I can see already having the dry ingredients mixed up in the pantry, and just boiling the water to throw it in.

The cranberries and raisins become delightfully plump and sweet, and the flax seed was added to up the nutritional ante a bit more.


Breakfast Quinoa

Breakfast Couscous
(recipe adapted from Cooking Light)

1 1/4 c water
1/2 c milk
1/2 c couscous
1/4 c cranberries
1/4 c raisins
1/8 c golden flax seed (or regular)
2 tbsp brown sugar
1/2 tsp cinnamon
1/8 tsp salt

Bring water to boil in small saucepan. Add remaining ingredients, remove from heat. Cover and let stand 10 minutes. Serve either hot or cold.

Is this one serving or more? I think I'd like to make this dish, but I would definitely do what you said and make the dry ingredients ahead of time in bulk and then add the liquid to a single serving when I wanted breakfast.

I think I read that issue of CL... I should check it out. I really like your blog! I'm toying with the idea of vegetarianism right now, but I think what I'm going to do is make it my goal to eat veggie 3-4x per week and then eat meat the other days. I think I would go fully veggie, but my husband definitely won't. :)

Ok, I made this this morning, substituting 1T honey drizzled over top for 1 T of the brown sugar, and used a cranberry/apple dried fruit mix. And this? BANGING. You can set up the ingredients (dry) the night before, heat the milk/water in a jiffy, and let it soak while you're getting your shower/ready for work. It travels well too. :)

This sounds like something I ate in Bukkitingi, Sumatra, an hour before dislocating my knee and....oh the torture to be laid up in a little guesthouse up the hill, unable to hobble the distance every morning. I know what I'm having for breakfast tomorrow.
