Crispy Flatbread with Everything

Obviously I love to make dips. If you look at my recipe drop-down menus, you'll see that it's loaded with entries. But one of the dilemnas of making all of those delicious dips is finding something to serve them with.

That's why I love recipes like this. Like the polenta crackers, these take just a few minutes to make and are extremely versatile. The added beer gives these a light, flaky texture and adds crispy bubbles during baking. Although I've used a mix of spices to make these like everything bagels, you can easily use whatever herbs and spices you need to suit your purpose.

Everything Beer Flat Bread

Crispy Flatbread with Everything

2 cups flour
1 tsp salt
3/4 c beer
3 tbsp olive oil
2 cloves garlic, minced
1/2 tsp poppy seeds
1/2 tsp sesame seeds
1/2 tsp caraway seeds
1/2 tsp dried minced onion
1/2 tsp dried minced garlic

Preheat oven to 400 degrees. Place cookie sheet in oven to preheat as well. In small bowl, combine olive oil and minced garlic and set aside. In large bowl, sift flour and salt together. Add beer and mix with hands until dough forms. Knead for 2-3 minutes. Allow to rest for 10 minutes. On slightly floured surface, roll dough out very thinly. (The thinner the dough, the crispier the flatbread will be) Place on parchment paper the size of the baking sheet. Brush dough with garlic olive oil and sprinkle liberally with seasoning. Lightly press seasoning into dough. Place into oven and bake 5-10 minutes until golden brown. Allow to cool on baking rack. Break apart when cool.

I'm not usually an "everything" kind of girl - I ordinarily like things plain Jane but this looks good!

The flatbread certainly looks good and I would love to try it.

However, my boyfriend "Big Bear" would not be able to eat it. He has no teeth, you understand, and I can imagine what those seeds would do to his gums.

I made him some gnocchi for his birthday dinner and he was able to gum his way through dinner, but anything with seeds is a disaster.

Since he already weighs 437 pounds, I hate to feed him gnocchi, but my choices are limited.

I WILL try the bread at my earliest opportunity if I should have a friend come over to the trailer park.

Yum! AND I have all this stuff at my house- which is amazing. I found Canellini beans on sale the other day, and will be whipping up some crispy flatbread, and canellini and feta hummus for snackin' in between classes this week!

Steamed mussels with wine sauce is one of my wife's and my favorite dishes when served with a flatbread "dipper" to soak up the delicious sauce.

Your recipe for the seeded flatbread is obviously better than what we have been buying at Trader Joes.

Thanks for the recipe! I seasoned mine with sesame seeds, sunflower seeds and ground mustard seeds. Forgot it in the oven for a minute too long but other than that, it came out delish!

I apologize for my husband. He's been amusing himself by pretending to be a poster named "Chiffonade," who in real life is a woman he's stalked for years now.

As you can see, you've been hit by Doc Chuck, Mrs. Doc Chuck and all the little Chucklets that live in his head.

Doc Chuck has been arrested in the past for online harassment - notably of the staff of the Baxter Bulletin. It was very public and humiliating.

In any case, I assure you I am simply a fellow lover of real food. Your everything flatbreads look outstanding and definitely something I'd try.

Oh, and for the record, Big Bear is a pet name I have for my BF. Chuck picked up this bit of knowledge by reading my myspace page.
