Cilantro Jalapeno Hummus

I'm a huge hummus fan. Not only is it a fairly healthy snack, but it's also something that can be whipped up in no time. If you're still buying hummus, I beg you to try and make your own, and I promise you won't be disappointed.
This, is by far, one of my most favorite hummus recipes, and probably one of my most favorite recipes to make, period. I've converted many a non-hummus eater with this recipe.

Hummus

Cilantro Jalapeno Hummus
2 cloves garlic, minced
2 (15oz) cans garbanzo beans, rinsed and drained
1/2 tsp salt
3 tbsp lime juice
1/2 c good light olive oil
1-2 jalapenos, seeded and finely minced
3/4 c fresh cilantro, chopped

In a food processor or blender, puree garlic, beans, salt, and lime juice. Slowly stream in olive oil until well blended. Stir in jalapenos and cilantro. Allow a hour or so in the refrigerator for the flavors to meld. Serve with pita chips*, fresh veggies, tortilla chips, etc.

*Pita chips are another thing that are extremely easy to make. Spicewise, they can be taken in literally any direction. Usually, I cut mine in half, brush them with a good salad dressing (such as Ken's Northern Italian), place in a 350 degree oven, and bake about 10-15 minutes, flipping once or twice until crispy. Or you can spray them with a little olive oil cooking spray, and hit them with whatever spices you'd like.

Honestly, you don't even need the blender. You can make a perfectly passable hummus using a stick blender.

This Hummus is the bee's knees. Really. For the longest time I thought my favorite hummus was the 2 Sheik's Lemon flavored jobbie you can pick up at the grocery store for about 3.00. No more. I actually DID ask 28 to marry me after making this. Really. It's that good. And that easy. I plan on having a good supply of this in the house at all times, for it rocks the free world. Honestly, it does.

Go. Make it. I'll wait.

I made this tonight. It's very good. I added 3 jalapenos and didn't seed them, so it is extremely spicy. Love the cilantro in there!! Another hit!

i'm waiting for my flavors to meld. i cut the recipe in 1/2 because i'm cooking for one. i also had a false start because my lady kenmore 600 failed me at blending :( i borrowed a mini food processor from a friend .... from all my little tastes, i think i'm going to love it. it was so simple, and fairly cost effective as well, and i know exactly what i'm eating. i love your blog because of its simplicity. here's the food and the recipe, and not all that crap about the MIL or BF or DH ! thanks! have a great holiday weekend.

Another great recipe from your blog. I can't decide if I like this or the roasted red pepper better. I did substitute 1 Tbsp of tahini for olive oil but that's just a matter of preference.

i have never made hummus before, but i grew the courage after reading this recipe.
my b/f has been obsessed with hummus these days so i figured i would make it myself.
in one month i have made this recipe 3 times!
i have perfected my hummus skills and also add in sun-dried tomatoes & a bunch of the jalapeno seeds for heat.
grrrrreat recipe!

Try this with smoked jalapenos , called chipotle peppers.
