Microtato Chips

You might want to prepare yourselves for this, folks. Because I'm about to introduce something revolutionary to you. And I'm sure everyone and their mother have been making these for years, but it's new to me. Fat-free potato chips. And I'm not talking those little potato-eque wafers you get at the grocery store. I'm talking straight up potato chips, just as good as the full fat ones, just as crispy, and definitely just as tasty.

Follow me on this - potatoes, made in the microwave, with just a smidgen of cooking spray. Flavored with whatever spice combination floats your boat. I'm talking Old Bay, I'm talking chili powder with fresh lime, I'm talking freshly cracked black pepper and sea salt.

Microtato Chips

Microtato Chips
2 large potatoes, freshly scrubbed
cooking spray
parchment paper or wax paper
desired seasoning
a microwave

Thinly slice potatoes, using either a mandolin, or a regular vegetable peeler. Spray a sheet of parchment paper (or wax paper) lightly with cooking spray, and lay potatoes out in a single layer. Season with desired seasoning, and place in the microwave. Microwave on high, 5-7 minutes, until chips start to brown. Remove from the oven, and cool for a few seconds. Enjoy!

  2. Sounds cool. I think I'm going to give those a try with some. I don't know about that wax paper though. The last time I put some in the microwave it started smoking. Did you use wax paper?

  3. Actually, I used wax paper all 3 times I made these, and it didn't melt or set on fire at all. Might be a difference in the brand. But I agree - to be sure, use parchment paper. Or a well oiled casserole dish.

    Fiber, you are my HERO! With my husband needing to be on a low/nofat diet, potato chips are never EVER on my shopping list.

    I just made 3 mini batches using sweet potatoes. Used just salt for 2 and Mrs. Dash Extra Spicy for the third---didn't much care for the Extra spicy....but my 4th batch will have some better spices!

  6. I skipped the wax paper/parchment thing altogether when I made my batches- just used my regular glass plates from Target (thank you 70% off after christmas clearance!). I used McCormick's "it's a dilly" seasoning with garlic pan spray, plain adobo seasoning with regular spray, and Mrs. Dash tomato/basil/garlic- all of which were slammin' and have met with "Really? Low fat, and crispy?" everywhere they've gone. Off to the Sharpie to find more taters and seasoning.

    I bake mine instead of microwave but that takes WAY longer. I am going to have to try it.

    I like mine with BBQ seasoning. But almost any seaon salt would work really well. Lowreys season salt is scary good with potatoes.

    I dredged my potato slices in vinegar and then sprinkled them with salt before I popped them in the micro. YUM! It's really hard not to eat the whole batch in one sitting.

  12. Chili Limon is my new favorite, but I'm toying with the idea of doing a sour salt version as well... (I tried the vinegar, and it wasn't effective for me)

    your potatoes look absolutely fabolous!!!!!!
    There are two questions I have:
    what´s in your cooking spray? Oil or water?
    and:
    do you put a cover over the potatoes before you but them in?

    Really yummy, but the 3rd batch blew out my microwave. Piece of poop machine... :o( That's the only drawback; single layer doesn't allow for many chips to be cooked at once.

  20. i tried these last night and they were amazing! my "experiment" potato was gone in a minute flat...i used old bay (being a baltimore girl) and will try some sea salt tonight...and maybe limes....mmmm, wonderful recipe! i love not feeling guilty about eating chips!
